Lemon Thyme Pork Tenderloin


  • pork tenderloin, 2 - 1 pound each
  • olive oil, 2 tablespoons
  • Lemon, To produce 1 teaspoon zest and 1/2 cup juice.
  • Garlic, minced
  • salt, 1 teaspoon
  • white pepper, 1/8 teaspoon
  • thyme, 1 1/2 teaspoons dried thyme leaves.


Lemon Thyme Pork Tenderloin

2 pork tenderloins,
(1 pound each), trimmed of fat
1/2 cup lemon juice
1 teaspoon grated lemon zest
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1/8 teaspoon white pepper
1 1/2 teaspoons dried thyme leaves

1. Pierce tenderloin all over with fork and place in baking dish.
2. Combine lemon juice, zest. olive oil, garlic, salt. white pepper
and thyme and pour over pork.
3. Cover and marinate in refrigerator at least 2 hours or
overnight. turning pork once or twice.
4. When ready to cook, preheat oven to 350 degrees.
5. Place tenderloins on shallow baking pan, 2 inches apart.
Roast 40-45 minutes, until pork registers 160 degrees on a
meat thermometer.
6. Let stand 5 minutes, then slice to serve. Pork will be light
pink in center.
