Richard's Pancakes


  • Milk, 1 cup
  • Egg, 1
  • Barley, 1/4 cup
  • Hard Wheat, 1/4 cup
  • Oats, 1/4 cup
  • Basmati Rice, 1/4 cup
  • Canola/Rape Seed Oil, 2 Tbs
  • Ground Cinnamon, 1 Tbs
  • Baking Soda, 2 tsp
  • Vanilla, 1/4 tsp
  • Salt, 1/4 tsp
  • Greek Yogurt, 1/4 cup
  • Cotija Cheese, 1/4 cup


Set griddle on heat for pancakes

Mix grains and grind to bread consistency (1/4 cup of each grain ground and unsifted can be used)

Combine grains with all dry ingredients and set aside.

Mix all wet ingredients together.

All at once add wet ingredients together with try ingredients until just mixed.

Let mixture sit for 5 minutes

Add additional milk if mixture is too thick.

Drop 1/3 cup on griddle and cook until bubbles burst and stay open on edges, flip and cook an additional minute.

Makes about 8 cakes, serves 2 tall or 4 short stacks.

Serve with Honey or Molasses or Sorghum
